Hotel Chocolat Croissants

Ingredients:

 

1 Box Hotel Chocolat Dark Tiddly Pot chocolate chips

1 Dessert puff pastry block

1 Egg

 

The simplest but most sensational French breakfast, that you could prepare are homemade croissants.

 

Take your pastry block out of the fridge for about 20 minutes before you start preparing your croissants. Once it’s nice and soft, open it! Sprinkle some flour on your table, put the block on top, take a rolling pin (or a glass like in my case), and start rolling until you obtain a thin, thin layer. Once this is ready, cut triangles from the dough, put the chocolate chips in the middle and shape your croissants.

 

Put the babies on a non-sticking tray, cover their tops with egg and toss them in the oven (to about 180 degrees, or even less). Take them out, once you get that golden look that you can’t resist!

Pasta with Pesto

Ingredients:

 

1 Pack whole grain pasta

1 Cup walnuts

½ Cup parsley

¼ Cup fresh chives

2 tbsp. olive oil

1 tbsp. lemon juice

1 Garlic clove

1 Pack baby spinach

Pepper

Sea salt

¾ Cup ricotta cheese

 

This is a nice Italian recipe for a healthy dinner. It can be prepared for less than 20 minutes, too!

 

Boil the pasta in a bit of sea salt and olive oil. Meanwhile, mix the spinach, parsley, chives, garlic, salt, pepper, lemon juice, walnuts and olive oil with a blender (or a food processor), in order to obtain your pesto mixture.

 

When the pasta is ready, mix your pesto with it, add the cheese and stir for 2-3 minutes. And it’s all done!

Auntie's Celery Salad

Ingredients:

 

2 Cups of tiny celery cubes

500g Greek yoghurt (9% fat)

3 Tbsp. light mayonnaise

2 Cups of crushed walnuts

4 Cloves of crushed garlic

Salt

Dill

 

Slice the celery into tiny cubes. Mix the mayo with the yoghurt and add all ingredients. Add salt according to you preferences and sprinkle with dill. Put the salad in the fridge and serve with crackers when your guests arrive!

Egg Bake for Lunch Break

Ingredients:

 

1 Potato

4 Tbsp olive oil

200g Chestnut mushrooms

1 Small red onion

1 Courgette

160g Baby spinach

8 Large eggs

25g Grated parmesan

75g Mozzarella

5 Big basil leaves

Sea salt & Pepper

 

This recipe is ideal for lunch with friends when served with a nice green salad. It won’t even take too much time!

 

Boil your potato and meanwhile slice your courgette and mushrooms into thin slices. Chop the onion and cut the mozzarella into cubes. When the potato is ready, peel it and slice it too.

 

Start with frying your mushrooms in the olive oil for a minute and add the onion and the courgette. Add the potato and the baby spinach (which of course you have already washed). While you are stewing the veggies, beat the eggs, add salt and pepper together with the parmesan and half of the basil leaves.

 

Take a baking tray, put all the veggies in, mix everything with the potatoes and sprinkle some more parmesan and basil. Sprinkle with the mozzarella cubes and bake until you obtain a golden crust!

Gym Soup

Ingredients:

 

1 Cup of red lentils

2 Carrots

1 Onion

1 Teaspoon mild curry

½ Teaspoon cumin

2 Bay leaves

Olive oil  

Salt

 

 

 

 

 

This soup is the perfect gym food to combine with your New Year’s resolutions. Chop your onion into tiny cubes, and then steam for a minute. Add your grated carrots and boil 1l of water in your kettle. Wash the lentils and add them to the carrots, then add the already boiled water. Toss in your spices and cook for 30 minutes. When the lentils are soft, take a spook and set some aside together with carrots and onions (about 3-4 tbs.). Blend your soup and when you obtain that creamy texture, return it back to the hob and throw back in the veggies that you have put aside. Taste it and add some salt or even pepper if needed. Make sure you don’t forget to go to the gym though, because the soup itself will not help you miraculously lose 2kgs!

Cuppa Friend Pie

Ingredients:

 

4 Eggs

2 Grated apples

2 Teacups self raising flour

1 Coffee cup oil

1 Teacup brown sugar

1 Teaspoon baking powder

1 Teaspoon vanilla extract

 

 

 

 

This beauty is easily going to impress the friends you’ve invited for a cuppa. Additionally, you can bring it in your lunchbox to brighten your gloomy winter working day! Let’s see how…

 

Mix the eggs with the sugar and oil. Gradually add the flour, the baking powder and the vanilla extract. Make sure you don’t forget to stir constantly! When your mixture is ready, toss in the grated apples and mix well.  

 

Preheat your magic oven to 200 C. Pour the batter in the oiled tray you have chosen for your pie and bake it until it gets this golden touch on top. Take a toothpick and if it comes out clean, then your beauty is ready to be taken out. Just like with the muffins, wait for about 10 minutes before serving it!

Sunday Muffins

Ingredients:

 

250g. Self raising flour

50g. Butter (unsalted)

1 Teaspoon baking powder

1 Teaspoon vanilla extract

90g. Caster sugar

150g. Chocolate chips

2 Eggs

220ml. Milk

 

 

 

 

 

These delicious muffins are a perfect snack for a cold winter Sunday. Luckily for you, they are extremely easy to prepare. Grab your ingredients and get startin'!

 

Mix the flour with the butter  and the baking powder (preferably with your hands) until you obtain tiny lumps. When that happens, add the sugar and continue mixing. Before tossing in the chocolate chips, make sre you steal a few in order to have something to munch on! 

 

Meanwhile, mix the milk with the eggs and the vanilla extract and once its ready add it gradually to the other mixture. When your batter is ready, pour it into lightly buttered muffin cases, and then bake your noms in a preheated to 180 C oven for about 15 minutes. 

 

When your Sunday muffins are done baking, put them aside for about 10 minutes untl they cool off, if you dont want to ruin their lovely shape! Serve with a cuppa and enjoy your Sunday afternoon!

Vegetarian Risotto

Ingredients:

 

700 ml Vegetable stock

50g Butter

1 tbs Olive oil

1/2 Red onion

1 Medium courgette

200g Rice

150 ml White wine

Fresh black pepper

Fresh chives

Fresh Basil

Fresh parsley

Thyme

Oregano

Parmesan

 

 

 

 

Put the vegetable stock to boil in a pot of water. Meanwhile, chop half of the courgette, take half of the butter, melt it, add the olive oil and fry the chopped courgette until it turns brown. When you are ready with this task, grate the other half of the courgette. Melt the other half of the butter in another pot and add the red onion. After you have fried the onion for a couple of minutes, add the grated courgette and fry for another one or two minutes. 

 

Add the rice to the mixture of onions and grated courgettes and wait for one minute before you add the wine. When the rice starts looking a bit transparrent, add the wine and boil until its all absorbed. When that happens, add salt and the fresh pepper and then start pouring the already boiled veggie stock with a ladle, one by one until the rice absorbes the stock gradually. 

 

When your rice is soft and yummy, add the fresh herbs and the fried chopped courgettes and mix for a minute until they warm up. Put this baby on a plate and grate some parmesan according to your preferences. For the more adventurous, some more pepper might come in hand to spice it up.

Sonya's Christmas Cookies

Ingredients:

 

1 Egg

500gr. Butter

100gr. Castor sugar

10g. Baking powder

4 Packets of vanilla sugar (8g. each)

1/2 teaspoon baking soda

50g. Cognac or whisky

400g. Peeled almonds

1kg Flour

Extra Castor sugar and vanilla to sprinkle the cookies

 

 

 

As Christmas approaches, the preparations for the holidays begin. Here is how you can prepare thse yummy homemade Christmas cookies...

 

Let's start with the already peeled almonds, which you have to cut to smaller pieces and bake in the oven (100C) until they turn pink.

 

Take the butter and slightly melt it, then add the egg, the sugar and the vanilla and mix well. Add the cognac to the mixture then the baking powder, the soda and finally the ready almonds. 

 

Mix all this mess with the flour and shape the cookies according to your preferences. When you are ready, put them in the oven (190C) and bake until they turn slightlya slghtly brown or a beige colour.

 

When you take the cookies out of the oven, roll them in the extra sugar and vanilla mix and put aside to cool off. When the cookies are already cold sprinkle well with more sugar and arrange them in a Christmasy way!

Potato and Bacon Quiche

Ingredients:

 

4 Big potatoes

1 Red onion

1 Shortcrust pastry sheet

1 Pack of bacon lardons

100g. Sour cream

1 Small cup of milk

1 tbs. Sweet mustard

2 tbs. Self rising flour

3 Eggs

200g. Cheddar cheese of Feta

1/2 teaspoon salt

Pepper

Parsley

 

This chef d'oeuvre is a French invention, which has different variations. In this particlar one you can enjoy the combination of bacon and potatoes for a rich fulfilling taste.

 

Leave the pastry on room temperature for about 25 minutes and meanwhile preboil the unpeeled potatoes (15 to 20 minutes). When they are ready, put the potatoes aside to cool off. 

 

Spread the pastry on the bottom of an oiled tray, cut the potatoes in circles and arrange them inside. Sprinkle the red onions on top and fry the bacon for a couple of minutes. 

 

For the filling, mix the eggs, sour cream and spices. Add the selfrising flour plus the cheese and mix well. Pour the mixture in the already arranged with love baking tray et voilà! 

 

Bake in a preheated to 170 degrees Celsius oven for about 30 minutes until you obtain a golden crust.

The Hungry Student

Ingredients:

 

4 Eggs

2 Cups of Greek yoghurt

1 Tea spoon of baking soda

5 Table spoons olive oil

Salt (on taste)

1 Table spoon thyme

1 Table spoon oregano

2 Cups of flour

200g. Greek feta cheese 

Green olives (according to your preferences)

 

This is a fairly easy recipe, which is suitable for students on a low budget or limited spare time. All you need to do is to preheat the oven on 180 degrees Celsius and mix all the ingredients nicely with a fork (not a mixer!) in the order they are listed. Once you have a nice mixture, pour it in a baking tray. Remember to put some olive oil (or butter) on the bottom of the tray, if you don't wanna ruin your masterpiece! 

 

Put this marvelous-to-be-creation in the oven and bake for 20 minutes or until the top gets a bit brown. Then take it out of the oven and cover it with baking paper and bake until it is completely ready. If you don't know how to make sure it's done, use a toothpick and try if it end comes out dry after stabbing your beloved creature right in the heart!

Carrot & Potato Cream Soup

Ingredients:

 

3 Medium potatoes

1 Red onion

3 Big carrots

1l Chicken broth

Salt

Pepper

A pinch of nutmeg

A pinch of corriander 

A pinch of ground cumin

Fresh parsley

 

Everybody knows that soup can soothe a foodie's soul! Here's how to treat your beloved homesick self in times of need:

 

Simply chop one red onion and fry it with butter for a couple of minutes. Add three medium potatoes and three big carrots and cover for five minutes. Add one litre of chicken broth together with the spices listed above. Cook until the veggies become soft, then take the pot off the hob and blend until you obtain a nice creamy mixture. Put the pot back on the hob and add a small cup of milk and some salt and pepper. Simmer for a few minutes et voilà!

Bulgarian Moussaka

Ingredients:

 

1kg.  Potatoes

500g. Minced meat

200g. Tomatoe paste

120g. Greek yogurt

3 Eggs

1 tbs. Paprika

1 pinch of nutmeg

Black pepper

Parsley

Salt

 

Chop the onions and fry them for a few minutes. Add the minced meat and separate it with a fork until you obtain small chunks. Add black pepper and pour in the tomato paste. Simmer from five to ten minutes.

 

Meanwhile, preboil the potatoes for about fifteen to twenty minutes, cut them on cubes and put them in oiled baking tray. Add fresh parsley, nutmeg and paprika with salt (on taste). When the minced meat is ready add it to the potatoes and mix well all of the ingredients. Put this yum-yum in the oven, which of course you have preheated (you know the drill 180 degrees Celcius).

 

Bake this work of art for 20 minutes and add the topping, which consists of 120g Greek yogurt mixed with three eggs.You will know it's ready when you see the topping get that golden look! Serve with yogurt!
